Lobster Roll

Makes 4 large lobster rolls (you may want to eat more than one)
Time: 30 minutes, including cooking the lobster

Salt
4 (1- to 1 1/4-pound) lobsters or 1 pound lobster meat
Large bowl ice water
4 hot dog buns
8 tablespoons (1 stick) melted unsalted butter, warm

1. Put about 2 inches water in a large pot, salt it, cover, and bring to a boil. Plunge the lobsters into the pot, cover, and cook about 10 minutes, or until the lobsters are bright red. Plunge into ice water until cool enough to handle, then remove all the meat; shred with your hands or roughly chop it. Work quickly so the meat stays warm.

2. Split and lightly toast the hot dog buns. Portion the lobster meat among the 4 buns, spoon 2 tablespoons melted butter over each sandwich and sprinkle with salt. Eat with napkins near at hand.
